Salmon Burger recipe for the May 2011 newsletter.  This recipe has a little kick, but not to much of one.

1 (12 oz.)Can Salmon

1 egg white

1/4 cup Green onion

1/2 cup fresh bread crumbs

1 medium garlic clove or 1 TSP minced Garlic

1 teaspoon dried dill weed

1/2 teaspoon salt

1/2 teaspoon Black Pepper

1/2 teaspoon Cayenne Pepper

1 TSP Pimiento

In a large bowl mix together the salmon, egg white, green onion, bread crumbs, garlic, dill, salt, pepper, cayenne pepper and pimiento.  Form into patties and cook on a skillet.  Be careful flipping them as they can fall apart.

The May 2011 newsletter is out.  Included in the newsletter is the recipe for a salmon burger…  Very tasty and has a little kick…

Will be adding Caffe Baci and Kohan japanese and sushi to the Chigaco Chefs blog.. Check back soon to see the dishes the chefs come up with..

On Saturday, I got a chance to eat at Deleece on Southport.  The food and service was great!  We started off with the Crab risotto cakes.  They were light and not overly filling.  Which is great for an appetizer.  For dinner, I decided on the Grilled Strauss ‘free raised’ veal skirt steak.  Great flavors and nice presentation of the dish.  All the components of the dish worked very well together.  After dinner we found out that they are moving and found this on the ChicagoMag.com.  I would definitely go to the new place and get dinner and maybe lunch…  Go and check them out.

Da Lease

Facing the expiration of the lease at Deleece (4004 N. Southport Ave.; 773-325-1710), Lynne Wallack decided to explore her options instead of just negotiate a new lease. Only a few blocks down the street, she spotted a for-lease sign at 3747 North Southport Avenue, the former home of Take Five and Strega Nona. The building’s new owners also own the long-dormant Mercury Theatre next door, and as part of the reopening of the theatre, they were looking for a casual fine-dining restaurant to partner with in the adjacent space. “We were thinking, Oh my God, this was meant to be,” Wallack says. Deleece will partner with Mercury on pretheatre dinners and introduce a small-plate menu for quick bites before or after shows. The restaurant and theatre will even share bathrooms, so if you’re eating there during a show, try to use the loo before the intermission rush.
